I smoked this brisket back on Easter 2021. It was the first brisket I ever smoked. It turned out great.

I smoke these two small briskets yesterday (08/06/2021). Second time ever. They were great also. So far so good.

Finally shot a small pig, and got to try my hand on some wild pork in the smoker. Two 5 lb hams, and two 1 lb back straps. I used a little to much cyan pepper, but other than that it turned out great. A little spicy, but delicious.

If you have yogurt, take a spoon from time to time and all the extra spiciness will go away. It is an old trick learnt when I was in India and they have spicy food!
